100g plain flour 2 large eggs 300ml milk 1 tbsp sunflower or vegetable oil, plus a little extra for frying lemon wedges to serve (optional) caster sugar to serve (optional)

Ingredients

STEP 1

Combine 100g plain flour, 2 large eggs, 300ml milk, 1 tbsp sunflower oil and salt in a bowl or large jug, then whisk to combine.

STEP 2

Take a 30-minute break or start cooking immediately if you do not have time to rest.

STEP 3

Use some oiled kitchen paper to wipe the surface of a medium frying pan or crêpe pan over a medium heat.

STEP 4

Keeping them warm in a low oven while cooking, cook your pancakes for 1 minute on each side until golden.

STEP 5

If you wish, you can serve with lemon wedges and caster sugar, or with whatever filling you like. Pancakes can be frozen for up to 2 months once they have cooled between baking parchment.
